FRUIT CAKE | |
2 1/2 c. sifted flour 1 tsp. baking soda 2 eggs, lightly beaten 1 jar (28 oz.) nonasuch mincemeat 1 c. sweetened condensed milk 1 c. walnuts, coarsely chopped 2 c. mixed candied fruit OR 1 c. mixed candied fruit and 1 c. raisins Butter 2 loaf pans and line with wax paper and butter again. Sift flour and soda. Combine eggs, mincemeat and milk, nuts and fruit. Fold in dry ingredients. Pour into pans. Bake in slow oven (300 degrees) 2 hours or until center springs back and top is golden. Cool, turn onto racks and remove paper. Cool completely. Wrap each loaf in clean cloth and sprinkle with bourbon (to taste), wrap tightly (in foil) for several days before eating. If cake dries out, sprinkle with more bourbon. |
