STUFFED ONIONS FOR TWO | |
2 med. yellow onions 1/3 to 1/2 lb. ground turkey 4 oz. cheese (Swiss or Cheddar), grated 1 clove garlic 1/8 tsp. ground red pepper 1/2 tsp. oregano 1/2 tsp. basil 1/2 tsp. salt Cracker crumbs butter Cut off both ends of onions and peel off outer layer of skin. Place in shallow microwave dish with 1/2 inch water. Microwave on high for 5 to 6 minutes until centers start to pop up (check both sides of onion). Remove from microwave and let cool slightly. Carefully spoon out centers of onions leaving a thin outer shell. Set shells aside. While onion centers are cooling slightly, combine turkey, garlic and spices. Microwave 2 or 3 minutes until turkey is mostly cooked. Stir as needed to mix spices. Drain off fat. Chop onion centers into bite-size pieces. Combine meat, chopped onions and grated cheese. Place onion shells in microwave bowl and fill with mixture. Place excess mixture around outside of shells. Sprinkle cracker crumbs on top and finish with a pat of butter. Microwave on high for approximately 5 minutes. |
