POTATO REFRIGERATOR ROLLS 
1 1/2 c. warm water
1 pkg. dry yeast
2/3 c. sugar
1 1/2 tsp. salt
2/3 c. soft shortening
2 eggs
1 c. lukewarm mashed potatoes
7-7 1/2 c. flour

In mixing bowl dissolve yeast in water. Stir in sugar, salt, shortening, eggs and potatoes. Mix in flour with hands until dough is easy to handle. Knead on lightly floured board until smooth and elastic. Place, greased side up, in greased bowl, cover with damp cloth; then, place in refrigerator. Punch down occasionally as it rises.

When ready to use, form into desired shapes and place in greased pans. Cover and let rise until double in size. Heat oven to 400 degrees. Bake 12-15 minutes. Makes 4 dozen average size rolls.
