FRIED OKRA SALAD 
Peel and slice five medium-sized potatoes
Peel and slice thin one onion
Slice 1 1/2 c. okra
Slice 1 green tomato (you may add two sm. yellow squash, and one or two Jalapeno peppers)

Mix all vegetables in a large bowl. Salt and pepper to taste. Add enough flour to coat the vegetables. Heat 1/2 inch vegetable shortening in large skillet. Add floured vegetables and fry until brown. Good!!
