SOFT PRETZELS 
11 c. Robin Hood flour
5 c. pastry flour
1 1/2 c. brown sugar
1/2 tbsp. salt
1 1/2 tbsp. instant yeast
6 c. lukewarm water

Mix yeast, brown sugar and lukewarm water. Allow to set 5 to 10 minutes. Mix well with other ingredients, knead and allow to rise.

Mix 2 heaping tablespoons baking soda with 1 quart hot water. Plop dough batch onto board, press flat with hands, cut into strips and work each strip into thin, long shapes. Then form into pretzel and dip into baking soda solution.

Sprinkle with pretzel salt and bake in very hot, 550 degree oven for 5 minutes or until done. Dip into melted butter and serve hot with mustard or mustard sauce.

Work in more flour if not stiff enough.
