PERFECT MEDIUM RARE TENDERLOIN | |
Start with whole tenderloin. Ask butcher to remove membrane and all fat to prepare for roasting. Rub tenderloin with oil, then salt and pepper. Place tenderloin in pan with heavy-duty foil. DO NOT COVER MEAT WITH FOIL. Cook at 450 degrees for 23 minutes. Take out of oven. Wrap roast tightly in the foil and let stand 23 to 25 minutes, no longer. Too easy to be true! |
