BELGIUM STYLE POTATOES 
5 potatoes
2 tbsp. butter
2 egg yolks
1 tsp. nutmeg

Cook 5 large potatoes in salt water; drain. Mash and add 2 tablespoons butter, 2 egg yolks, 1 teaspoon nutmeg, salt, and pepper. Beat above; pile high on baking dish. Put pat of butter on top and bake at 375 degrees until light brown (approximately 45 minutes).
