HOT CHOCOLATE VARIATIONS 
1/4 c. cocoa
2 to 4 tbsp. sugar
1/8 tsp. salt
1 c. boiling water
3 c. scalded milk
1/2 tsp. each cinnamon and vanilla extract

BRAZILIAN COCOA:

1 oz. chocolate
3 to 4 tbsp. sugar
1/8 tsp. salt
1 c. boiling water
1 1/2 c. each hot milk and hot coffee
Nutmeg or mace to taste
Whipped cream
Instant coffee

FRENCH COCOA:

1/4 c. semi-sweet chocolate pieces
1/4 c. light corn syrup
1/4 c. water
4 c. scalded milk
4 tbsp. orange juice or orange flavored liqueur
1 c. whipping cream, whipped
Grated orange rind

VIENNESE COCOA:

1. In saucepan, combine cocoa, sugar and salt. Slowly stir in boiling water. Pour in milk, stirring.

2. Over medium low heat, heat cocoa until tiny bubbles form. Remove from heat. Add cinnamon and vanilla. Beat until foamy before serving.

BRAZILIAN COCOA:

1. In top of double boiler, combine chocolate, sugar and salt. Stir in boiling water. Over simmering water, heat until chocolate is melted.

2. Add milk and coffee, stirring. Mix in nutmeg. Top with whipped cream. Sprinkle with instant coffee.

FRENCH COCOA:

1. Combine chocolate, corn syrup and water in saucepan. Heat over low heat until chocolate is melted. Gradually add milk.

2. Remove from heat. Stir in orange juice. Top with whipped cream. Sprinkle with grated orange rind.
