MINIATURE CHEESECAKES 
1/2 c. vanilla wafers, crushed
2 tbsp. butter, melted
1 (8 oz.) pkg. cream cheese, softened
1/4 c. sugar
1 egg
1/2 tsp. vanilla extract

Combine wafers and butter; stir well. Line 1 3/4 inch muffin pans with miniature paper liners. Spoon 1 teaspoon mixture into each liner; gently press into bottom. Beat cream cheese and sugar until fluffy. Add egg and vanilla, mixing well. Spoon evenly into liners. Bake at 350 degrees for 10 minutes. Cover and refrigerate. Makes 24.
