BROCCOLI AND RICE CASSEROLE 
2 c. uncooked rice
2 pkgs. frozen chopped broccoli
2 eggs, beaten
1 sm. grated onion
1 can cream of celery soup
1/2 c. oil
3 tsp. butter
1 lb. Velveeta cheese, grated
1 c. milk

Cook broccoli for a few minutes, not thoroughly. Mix all ingredients in large bowl. Add broccoli. Pour all ingredients in a 2 quart greased casserole dish. Bake uncovered 45 minutes at 350 degrees. Serves 8-10.
