HEARTY CHICKEN 'N RICE SOUP 
1 can chicken broth
2 c. cold water
1/2 c. uncooked rice
1/2 c. sliced celery
1/2 c. sliced carrots
3/4 lb. Velveeta cheese, cubed
1 1/2 c. chopped cooked chicken or turkey
1 (4 oz.) can mushrooms, drained

Combine broth, water, rice, celery and carrots. Cover and simmer for 20 to 25 minutes or until vegetables and rice are tender. Add remaining ingredients. Stir until cheese is melted.
