PIZZA QUICHE 
Pastry for 9 inch pie crust
1 c. ricotta or cream style cottage cheese
3 eggs
4 oz. browned & drained Italian sausage
1 c. Mozzarella cheese, shredded
1/2 c. sliced, halved pepperoni
1/2 c. sliced salami, cut into strips
1 egg, beaten
2 tbsp. milk

Line 9 inch pie plate with 1/2 pastry. Crimp edges. Bake at 450 degrees for 4 to 5 minutes. Remove from oven and reduce temperature to 350 degrees. Beat together ricotta and 3 eggs. Fold in sausage, Mozzarella, pepperoni, salami, and 1/2 cup Parmesan cheese. Turn mixture into baked shell. Roll out remaining dough. Cut 6 to 8 wedges and place on top. Bake 20 minutes. Combine beaten egg and milk. Brush over top and bake 20 minutes longer. Cool 10 minutes before serving.
