PEACH COBBLER 
2 c. sugar
1 c. water
2 tbsp. corn starch
3/4 stick butter
2 quarts peaches
2 pie crusts
2 additional tsp. sugar

Mix sugar and corn starch; put 1/2 mixture in pan. Add fruit, rest of sugar mixture, butter and water. Top with pie crust; bake in a moderate oven (350 degrees). When about half browned, smooth over crust with pat of butter and sprinkle with 1 teaspoon sugar. Finish browning. Add another crust on top and half brown it as well. Spread with pat of butter and 1 teaspoon of sugar; finish browning.
