PAELLA 
1 1/2 c. olive oil
1 onion, chopped
4 garlic cloves, chopped
1 green pepper, chopped
1 jar red pimientos, chopped
2 whole chicken breasts
1/2 lb. cooking ham, cubed
1/2 lb. pork, cubed
1/2 lb. fish (halibut, flounder, etc.), cubed
2 lbs. shrimp

In a deep pan, oven proof, add chicken pieces, ham and pork, cook about 5 minutes, stirring frequently. Add fish and pieces of lobster tail, stir. Add tomato sauce, pimientos, salt, pepper and wine and chicken broth, bring to a boil. Add rice, stir well with a fork and add shrimp. Cover and cook in oven 40 minutes. Stir gently with a fork before serving. Serves 8 to 10 people.
