LEMON POTATO PUFF | |
4 potatoes, peeled, quartered, cooked, and mashed 1/2 c. milk 1/3 c. mayonnaise or salad dressing 1 tsp. finely shredded lemon peel 1 1/2 tsp. lemon juice 1/2 tsp. salt 2 eggs, separated 1/4 c. fine dry bread crumbs 1/4 c. shredded American cheese 2 tbsp. butter, melted Beat together the potatoes, milk, mayonnaise or salad dressing, lemon peel, lemon juice, salt, and egg yolks. Beat the egg whites to stiff peaks; fold into potato mixture. Pile mixture into a 6-cup souffle dish. Combine remaining ingredients; sprinkle on top. Bake in a 350 degree oven for 55 to 60 minutes. Makes 6 servings. |
