SHRIMP SCAMPI 
1 1/2 lb. shrimp (med.)
1 qt. container fresh mushrooms
1 med. onion
3 whole dried red chili peppers
Dash of ground red pepper
2 tbsp. lemon juice
3/4 stick butter
3 cloves garlic
2 c. rice
1 can beer

Cook rice according to package directions and allow to set 5 to 10 minutes to become firm. Cook shrimp in 1 can of beer with adequate water for boiling shrimp and cook until done, approximately 5 minutes. Saute mushrooms, onion, garlic and shrimp in lemon juice and butter. Add rice and stir fry approximately 3 minutes until rice is coated with juices. Serve immediately.
