1 can tomato bisque soup 1 lb. ground chuck 1 can corned beef 2 1/2 c. soft bread crumbs 2 eggs 2 tbsp. parsley 1 c. sauerkraut, well drained 1/2 tsp. caraway seed 1 c. shredded Swiss cheese 1 tsp. horseradish 2 slices Swiss cheese 1. Mix thoroughly 1/4 cup soup, ground beef, corned beef, bread crumbs, eggs and parsley. 2. On wax paper pat meat firmly into rectangle. 3. In small bowl combine sauerkraut, caraway and shredded cheese. Press into meat 1 inch from edge. 4. Roll meat like jelly roll. 5. Put in baking dish. Cover; bake 1 hour at 350 degrees. 6. Mix remaining soup and horseradish. Spoon over loaf. Cook uncovered 15 minutes. 7. Arrange cheese slices on top. Cook 5 minutes. Let stand 5 minutes. Serves 8. Can made 2 meatloaves from this recipe. Freeze one before baking for use later. |
