COFFEE CAKE 
1/2 c. milk, scalded
1/4 c. sugar
1 tsp. salt
1 pkg. yeast
1/4 c. warm water
1 beaten egg
1 1/2 c. flour
1/4 c. soft shortening
3/4 c. flour

STREUSEL TOPPING:

1/4 c. sugar
2 tbsp. flour
1 tsp. cinnamon
2 tbsp. hard butter

Mix scalded milk, sugar and salt; cool to lukewarm. Dissolve yeast in warm water. Add. Add egg, 1 1/2 cup flour and shortening. Beat thoroughly. Add the 3/4 cup flour. Beat hard. Let rise until doubled. Pour into greased 9-inch square pans. Let rise. Bake at 350 degrees for 35-40 minutes.
