CHILI RELLENO CASSEROLE 
1 (#3) can Ortega chilies, whole or diced
1 lb. Tillamook grated cheese
1 lb. Jack cheese, grated
4 eggs
1 (13 oz.) can evaporated milk or whole milk
3 tbsp. flour
1 tsp. salt
2 (8 oz.) cans tomato sauce

Seed chilies and wash. Layer in 9 x 13 pan chilies, cheese, ending with cheese. Beat egg yolk, milk, flour, and salt. Beat egg whites until stiff. Fold in egg yolk mixture. Pour over chili and cheese. Bake at 350 degrees for 1 hour (remove and pour tomato if desired). Bake for 15-20 minutes.

VARIATIONS: Line pan with tortilla layer hamburger, chili, cheese, refried beans, skip eggs. Bake at 350 degrees for 30-45 minutes. HINT: Cook hamburger with onion and seasonings before layering in pan.
