HEALTHY SPINACH CASSEROLE | |
You don't need eggs for this recipe because the cheese holds it together. This is delicious! 1 cup cooked instant brown rice (no salt) 8 oz. shredded sharp cheddar cheese (I use low-fat 2%) 1 (16 oz.) pkg. frozen chopped spinach, thawed 4 tbsp. (1/2 stick) butter (optional) Combine all ingredients and place in a glass casserole dish. Bake at 350°F for about 40 minutes or until lightly browned. Note: If you are not too worried about a little extra fat in the recipe, you can add 1/2 stick of butter (yum!). Submitted by: Stacy |
