TURKEY SCALLOPINI 
1/4 c. butter
1/2 lb. thinly sliced mushrooms
1/4 c. flour
1/8 tsp. pepper
1 lb. turkey breast, sliced or cutlets
Chopped parsley

Melt 2 tablespoons butter in large skillet (medium heat). Add mushrooms and saute until tender - remove from pan. Combine flour, salt, pepper. Coat turkey. Melt remaining butter over medium heat.

Brown turkey both sides - few pieces at a time, 1-2 minutes each side. Remove turkey. Add approximately 1/4 cup water, stir until thickened - add turkey and mushrooms until heated through. Arrange on serving platter and garnish with chopped parsley. Good with rice and mushroom gravy.
