COLD RICE SALAD 
2 c. white rice
2 tbsp. butter
4 c. chicken broth
2 sm. jars marinated artichoke hearts, cut to bite size pieces (save liquid)
1 lg. onion
1/2 c. green pepper, chopped
12 black olives (leave whole or slice--I slice them)
1/2 c. mayonnaise
3/4 tsp. curry powder

Cook together in a pan--rice, butter, chicken broth. Bring to a boil. Simmer covered for 20 minutes. Stir as needed. After rice is cooked, cool it a bit.

Combine artichoke hearts, onion, green pepper, black olives, mayonnaise, liquid from artichokes, and curry powder. Pour mixture over rice and toss. Serve cold! Enjoy!
