SOUTHWESTERN - STYLE POPOVER | |
1/2 lb. ground beef 1/2 c. chopped onion 1 (8 oz.) pkg. cream cheese, cubed 1/4 c. water 1/2 tsp. salt 1/2 tsp. dried oregano leaves, crushed 1/4 tsp. ground cumin 3/4 c. flour 1/2 tsp. salt 3/4 c. milk 2 eggs, beaten 1 tbsp. cornmeal 1 med. tomato, chopped Brown meat; drain. Add onions; cook until tender. Add cream cheese and water; stir over low heat until cream cheese is melted. Stir in seasonings. Combine flour, salt, milk and eggs; beat until smooth. Pour into greased 9 inch pie plate. Sprinkle with cornmeal. Spoon meat mixture over batter. Bake at 400 degrees for 35 minutes. Top with tomatoes. Try adding 1 (4 ounce) can chopped green chilies, drained, to meat mixture. Makes 6-8 servings. |
