SODA CRACKER PIE 
14 soda crackers
1 cup sugar
1 1/2 tsp. baking powder
1 cup pecans or 2 tbsp. crunchy peanut butter
3 egg whites
1 tsp. vanilla
Cool Whip, for topping

Crush crackers to fine crumbs with a rolling pin. Mix sugar and baking powder and add to crackers. Add nuts or peanut butter; mix well. Fold in beaten egg whites and vanilla. Pour into 9-inch buttered, ovenproof pie plate. Bake for 25 minutes at 325°F. Pie will swell. Cool and top with Cool Whip.
