SOUSED APPLE CAKE 
4 c. peeled, chopped apples

Place apples in bowl and put 1/2 cup brandy. Let stand overnight to absorb brandy (put in plastic bag).

ix:

2 c. sugar (I use 1 1/2 c.)
2 eggs
1/2 c. vegetable oil

ift:

2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. nutmeg
1 tsp. salt
1/4 tsp. ground cloves

1 c. plumped raisins (scald and let stand)
1 c. nuts

Combine apples with egg mixture. Beat well, add flour mixture; beat. Add raisins and nuts last. Bake in 9 x 13-inch pan for 1 hour at 325 degrees. Serve hot or cold with whipped cream or ice as follows:

1 (3 1/2 oz.) pkg. cream cheese
1 stick butter
1 lb. confectioners' sugar (3/4 lb. may be enough)
2 tbsp. rum, sherry or liqueur of choice

Sprinkle icing with chopped nuts.
