SESAME MUFFINS (SUGAR FREE) | |
2-3 ripe bananas, peeled 1 egg 1 c. milk 1/4 c. vegetable oil 1 tsp. vanilla 1 1/2 c. quick oats 1/2 c. flour 1/2 c. whole wheat flour 1 tbsp. baking powder 1/2 tsp. salt Sesame crunch Mash bananas (1 cup). Combine with eggs, milk, oil and vanilla; set aside. In large bowl combine all dry ingredients. Stir in banana mixture just until moist. Fill 12 muffin cups 3/4 full. Sprinkle crunch on top. Bake at 400 degrees for 20 to 30 minutes. CRUNCH: 1/4 cup chopped nuts, 2 tablespoons brown sugar, 2 tablespoons sesame seeds, 1 tablespoon wheat flour, 1/4 teaspoon cinnamon and nutmeg. Cut in 2 tablespoons butter. |
