CHICKEN DINNER CASSEROLE 
3 lb. fryer, cut up
Salt and pepper
1/4 c. cooking oil
2 c. chopped onion
1 c. raw rice
1 (15 oz.) can tomato sauce
2 c. water
1 tsp. salt
1/4 tsp. pepper
1/2 c. sliced ripe olives
1 (10 oz.) pkg. frozen peas (thawed)

Sprinkle chicken with salt and pepper, then brown in oil. Add onions and saute. Stir in tomato sauce, water, salt, pepper, and rice. Bring to boil; cover and simmer for 45 minutes. Add peas and olives; continue cooking covered 15 minutes. Serves 4.

Special Note: Be sure to ONLY use 1/4 cup of oil or dish will too greasy.
