TABBOULEH 
Several sprigs of mint (1/2 c.)
1 bunch green onions, chopped
1 med. cucumber, chopped
4-6 med. tomatoes, chopped or 1 lb. cherry tomatoes (cut in half)
1 c. cracked wheat, purchased at health store or Namans in Mobile, AL
1/2 c. fresh or frozen lemon juice
1/4 c. olive oil
1 bunch parsley, chopped

Rinse wheat in cool water; place in large container. Add tomatoes. Combine oil, lemon juice, ground black pepper and salt; mix. Add to wheat and tomatoes. Add other vegetables. Mix and refrigerate 2-3 hours. Serve on bed of lettuce or cabbage leaves.
