EGGS IN A NEST 
4 c. onions, sliced, peeled
2 tbsp. butter
1 (1 lb.) can hominy, drained
1 tsp. salt
1/4 tsp. pepper
4 eggs
4 tbsp. light or table cream

Saute' onions in butter just until golden in a medium- size frying pan; stir in hominy, salt, and pepper; cook 3 minutes longer. Spoon into a shallow 4 cup baking dish; make 4 hollows in mixture to form "nests". Break eggs, one at a time, into a cup and place one in each "nest"; spoon cream over eggs. Bake in moderate oven (350 degrees) for 20 minutes, or until eggs are cooked as you like them.
