POTATO PANCAKES 
6-8 lg. potatoes, grated on smallest holes of grater
1 egg, beaten with fork
1 tbsp. flour
1 lg. onion, grated on smallest holes of grater
Salt & pepper to taste
Oil to fry

Do not add onion to potatoes until potatoes drain.

Peel potatoes, grate on smallest holes on grater. Put into strainer, place strainer in deep bowl, let potatoes drain. After potatoes have drained pour liquid and the white starch from the potatoes will be in the bottom of the bowl.

Mix potatoes, grated onion, egg, flour, salt and pepper, into the bowl with starch in bottom. Drop in very hot oil about 2 tablespoons per pancake. Fry until golden brown and crisp. If you want extra crispy pancakes spread thin with spoon.
