3 tbsp. butter 2 garlic cloves, minced 2 c. broccoli florets, cut into 1 inch pieces 2 c. cauliflower florets, cut into 1 inch pieces 1/4 c. water 4 sm. zucchini, cut into 2 1/2 x 1/2 inch strips (2 c.) 2 tbsp. chopped fresh dill or 1 tsp. dill weed Melt butter in a large skillet. Add garlic, broccoli and cauliflower. Cook over medium heat for 4-6 minutes, stirring frequently. Add 1/4 cup water; cover. Cook 2 minutes or until crisp tender. Add zucchini and dill; cook 3-4 minutes or until zucchini is crisp-tender. Yield 8 (1/2 cup) servings. |
