FRENCH MARKET BEAN SOUP 
2 c. bean mixture (16 kind variety beans)
1 1/2 c. chopped ham
1 lg. chopped onion
2 cloves minced garlic
1 tsp. salt
1 c. pearled barley
1 lb. can tomatoes
1 (10 oz.) tomatoes and green chilies, undrained

Rinse and drain beans in large pot. Cover with water and soak overnight. Drain; add 2 quarts water, ham, onion, garlic and salt. Cover and bring to a boil. Reduce heat. Simmer 2 hours or more until beans are tender. Add remaining ingredients and simmer 1/2 hour longer; stir occasionally. Add more water if needed.
