FATTOUSH 
11/2 lb. sliced and halved cucumber
1/2 lb. tomatoes (chopped)
1 toasted Arabic bread (broken into approximately 1 inch pieces)
1 crushed garlic clove
2 onions (wedged)
1/4 c. fresh parsley leaves
1/2 head Romaine lettuce (cut into bite-size pieces)
1/4 c. fresh mint leaves
2 tbsp. sumac
4 tbsp. fresh squeezed lemon
3/4 c. olive oil
1 tbsp. salt

Combine vegetables, bread and spices. Add juice and olive oil. Makes 5 to 6 servings. Preparation time: 35 minutes.
