SNICKERDOODLES 
1 c. soft shortening
1 1/2 c. sugar
2 eggs
2 3/4 c. flour
2 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt

Mix the shortening and sugar together thoroughly. Add the two eggs. Sift the dry ingredients together and stir into the moist mixture. Roll into 1 inch balls. Roll each ball in a mixture of 2 tablespoons sugar and 2 teaspoons cinnamon. Place two inches apart on an ungreased cookie sheet. Bake until lightly browned but still soft. These cookies puff up at first but then flatten out. Bake at 400 degrees for 8 to 10 minutes.
