SOUTHWESTERN TURKEY STIR FRY 
1 tsp. cornstarch
1/2 c. canned chicken broth
2 tbsp. olive oil
1 c. corn kernels
1 med. zucchini
1 med. red or green bell pepper
1 sm. red onion
2 cloves garlic, minced
Chili powder to taste
1 lb. cooked turkey, cut into strips
2 c. cooked rice

Dissolve cornstarch in broth. Set aside. In large skillet, heat oil. Add corn, zucchini, red or green pepper, onion and garlic. Cook, stirring often. About 2 minutes.

Add chili powder. Add turkey, stir often for 1 minute. Add cornstarch and cook until sauce thickens, about 1 minute. Serve over rice. Makes 4 servings.
