CUCUMBER SALAD 
2 lg. cucumbers
6 thin slices onion
1/3 c. vinegar
5 tbsp. water
5 tsp. sugar
1/2 tsp. salt
Dash of pepper
Chopped dill or parsley (optional)

Peel cucumbers and cut into thin slices. Put into a bowl with onion rings. Combine remaining ingredients for dressing and shake well. Pour dressing over vegetables and toss lightly to coat evenly. Cover bowl and put in refrigerator to chill for several hours until crisp. Serves 4-5.
