CREAMY RICE PUDDING 
6 c. milk (skim or fat free may be used)
1 lg. can of evaporated milk
2 1/2 c. water
1 c. reg. hard rice
4 lg. eggs
1 c. sugar
1 tsp. vanilla

Slowly bring milk, water and rice to a boil and boil for 40 minutes (less if recipe is cut in half) or until rice is done and mixture is thick and creamy, stirring often.

In large bowl, mix eggs, sugar and vanilla until very frothy. Add rice mixture while hot to egg mixture and fold together. Chill and enjoy. I put 1 cup raisins in and sprinkle nutmeg over top. You can also add a little cinnamon in the pudding itself.
