TEX MEX MEAT LOAF 
1 egg, slightly beaten or egg white
1 c. soft bread crumbs
1 (14 1/2 oz.) can tomatoes, drained and cut up
1 (4 oz.) can diced green chili peppers, drained
1/2 c. chopped pitted ripe olives
1/4 c. chopped onions
2 cloves minced garlic
1/2 tsp. cumin (optional)
1/2 tsp. salt
1/4 tsp. pepper
1/2 lb. lean ground meat or ground turkey
1/2 to 3/4 c. shredded cheddar cheese or low fat cheese
Combine the egg, bread crumbs, tomatoes, chili peppers, olives, onion, garlic,
cumin if desired, salt and pepper. Add beef and mix well.

Put mixture into a 9x5x3-inch loaf pan. Bake in 350 degree oven 50-55 minutes. Transfer to a serving platter. Top with cheese and let stand 5 minutes. Makes 6 servings.
