CHICKEN CACCIATORE 
2 lbs. skinless, boneless chicken breast
Seasoned salt
1 (8 oz.) can mushrooms, drained or sliced fresh
2 c. stewed tomatoes
1 lg. green pepper, chopped
2 tbsp. finely chopped pimiento
3 tsp. dried parsley
1 tsp. salt
1/4 tsp. dried thyme
1 clove garlic, pressed
1 bay leaf
Pepper to taste

Place chicken pieces in a 7 1/2" x 12 " glass dish. Sprinkle lightly with seasoned salt and top with mushrooms. In a 4 cup measure combine remaining ingredients. Cook on High for 5 minutes or until mixture comes to a boil. Pour over chicken and mushrooms. Cover with wax paper and microwave 20 minutes at 50% power. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
