PEACH PIE 
1 peach, mashed
2 tbsp. sugar
1 c. water
3 tbsp. cornstarch
1/2 pkg. sugar free lemon Jello
1 tsp. vanilla
Dash of nutmeg
6 c. sliced peaches

Mix peach, sugar, water, and cornstarch; cook until thickened. Add Jello, vanilla, and nutmeg; mix well. Stir in peaches. Pour into baked 9-inch pie shell. May serve with Cool Whip or ice milk.

Exchange: 1/6 pie = 1 starch, 1 fruit and 1 fat (1 teaspoon sugar).
