GROUPER WITH CONFETTI VEGETABLES 
1 lb. grouper fillet or any good firm white fish
1/4 c. lemon juice
1 sm. onion, chopped
1 sm. green pepper, chopped
1 1/2 tbsp. butter
1 sm. tomato, seeded and chopped
1/4 tsp. salt
1/8 tsp. pepper
1/4 c. sliced ripe olives
1 c. (4 oz.) shredded mozzarella cheese

Cut fillet into four equal portions. Place fish in a shallow container, and add lemon juice. Cover and refrigerate 2 hours. Place onion, green pepper, and butter in a 9 inch pie plate. Microwave, uncovered at high 2 to 3 minutes or until vegetables are crisp tender. Add tomato; microwave, uncovered, at high 1 minute. Drain and set aside. Remove fish from lemon juice, and arrange in a 9 inch baking dish with thickest portions toward outside of dish. Sprinkle with salt and pepper. Cover with wax paper, and microwave at high 6 to 7 minutes or until fish flakes easily when tested with a fork. Drain off any excess liquid. Spoon vegetable mixture over fish. Sprinkle with sliced olives and cheese. Cover and microwave at medium high (70 percent power) 2 minutes or just until cheese melts. Serve immediately. Yields 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
