DIET CHEESECAKE 
1 can crushed unsweetened pineapple
1 lb. light cottage cheese
2 lg. eggs
2 env. unflavored Knox gelatin
4-5 pkg. sweetener
1 tsp. vanilla
1 tsp. lemon juice
4-6 ice cubes

Drain in a pan, the pineapple juice. Sprinkle in gelatin. Heat to boil. Put all ingredients in blender, except cottage cheese; once blended, add half of cottage cheese and blend until mixed, then add the remaining cottage cheese and blend until mixed well. Then put into a graham cracker crust.

Graham cracker crust is made with 2 cups graham cracker crumbs blended with 1 stick melted butter and 5 packages of sweetener. Mix together and press into an oblong dish.
