GREEN ONION PASTA 
3-5 bunches green onions, scallions
1 c. favorite spaghetti sauce
4 tbsp. olive oil
1 garlic clove, chopped
1/2 lb. pasta, cooked al dente
3-4 tbsp. dry vermouth
Black pepper, freshly grated to taste
1/2 c. freshly grated Parmesan or Romano cheese

Clean the onions by cutting them lengthwise once and then into 1" pieces. Heat the sauce. Heat small frying pan and add olive oil and garlic. Cook for a moment and then add the green onions. Stir for just a moment and then put the onions and oil on the cooked pasta. Add the hot sauce, the vermouth and pepper to taste. Toss and top with cheese.
