SLICED BAKED POTATOES 
4 med. potatoes
1 tsp. salt (optional)
2 to 3 tbsp. melted butter
2 to 3 tbsp. chopped herbs (parsley, chive, thyme, or sage)
4 tbsp. grated Cheddar cheese
1 1/2 tbsp. Parmesan cheese

Peel potatoes if the skin is tough, otherwise just rinse and pat dry. Cut potatoes into thin slices but not all the way through. Use a handle of a wooden spoon to prevent knife from cutting all the way. Place potatoes in a microwave safe dish. Sprinkle with melted butter and herbs. Microwave at high power for 10 minutes. Rearrange potatoes after 5 minutes. Let rest for 5 minutes. Sprinkle with grated cheese and Parmesan cheese. Microwave for another 4 to 6 minutes at high until cheeses are melted and potatoes are soft. Sprinkle with salt, if desired.

For regular oven: Prepare as above. Bake potatoes at 425 degrees for about 50 minutes. Remove from oven. Add cheeses. Bake for another 10 to 15 minutes until lightly browned and cheeses are melted and potatoes are soft. Check with a fork.

Since microwave ovens vary in power, you may need to adjust your cooking time.
