SLICED BAKED POTATOES 
4 med. potatoes
Salt and pepper
3 tbsp. melted butter
3 tbsp. chopped herbs (dried or fresh, such as parsley, chives, thyme, etc.)
4 tbsp. grated cheddar cheese
2 tbsp. Parmesan cheese

Scrub potatoes. Cut into thin slices. But do not cut clear through. Put potatoes in baking dish and fan them slightly. Sprinkle with salt and pepper and drizzle with butter. Sprinkle with herbs.

Bake at 425 degrees for 50 minutes or until done. Remove from oven and sprinkle with cheeses. Bake another 10-15 minutes until lightly brown and cheese is melted. Serves 4.
