HARVEST TIME CAKE 
3 c. flour
1 3/4 c. sugar
1 tbsp. baking soda
1 tbsp. cinnamon
1 c. chopped pecans
1/2 c. raisins
1/2 c. flaked coconut
3 c. (6 med.) grated carrots
1 c. grated apple, peeled
1/2 tsp. salt
1 1/4 c. butter, melted
4 eggs
1 tbsp. vanilla

FROSTING: 1/3 cup butter (soft), 3 cups powdered sugar, 1 1/2 teaspoons vanilla, 2 to 4 tablespoons milk.

Heat oven to 350 degrees. In large bowl combine flour, sugar, baking powder, cinnamon and salt. Stir in butter, eggs and vanilla; mix well. Stir in remaining ingredients. Pour into greased 13"x9" pan. Bake 40 to 50 minutes. Cool completely.

FROST: Heat butter until delicate brown. Combine with other ingredients and beat. Add milk until smooth and spreadable.
