OATMEAL HARVEST CAKE 
Pour 1 1/2 cups of boiling water over 1 cup QUICK cooking oats and let stand for 20 minutes.

1/2 c. shortening
1 c. brown sugar
1 c. white sugar

2 beaten eggs
The oatmeal mixture

1 1/3 c. flour
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt

Bake at 350 degrees for 30 to 35 minutes. While cake is still warm, spread on the topping and place under broiler for 2 to 3 minutes or until brown.

TOPPING:

6 tbsp. melted butter
1/4 c. cream or canned milk
1/2 c. brown sugar
1 tsp. vanilla
1 c. coconut
1 c. pecan pieces
