2 c. sugar 1 tbsp. salt 1 tbsp. whole cloves 1 tbsp. mustard seed 2 tsp. ginger 1 c. vinegar 1 tbsp. whole allspice 1 tbsp. mixed pickling spices 1 tbsp. celery seed Wash enough small to medium cucumbers to fill a medium-sized crock jar. Pour fresh boiling water over these for 5 days. Drain the cukes well and cut them to the size desired on the 6th day. Make the brine. Heat to boiling and pour over the cukes. Sometimes it takes more brine so double that if you need. For 3 mornings, drain off the brine and add a scant cup of sugar as you boil it. On the 4th morning, heat the cukes in the brine, too. Put in the jars and seal. |
