QUICK BLENDER CHOCOLATE MOUSSE 
4 eggs, separated, room temperature
6 oz. chocolate chips
5 tbsp. boiling water
3 tsp. vanilla

Beat egg whites in a small bowl with mixer until stiff, but not dry. Place chips in blender. Break up pieces. Add boiling water. Whirl until smooth. Add egg yolks and vanilla. Whirl one minute, until thoroughly blended. Pour chocolate slowly over whites and fold in gently until no white shows. Spoon into individual serving dishes and chill 1 hour. Garnish and serve.
