FRENCH MARKET SOUP 
1 bag soup mix
1 onion, chopped
1 chili pepper, chopped
1 clove garlic, crushed
1 can (16 oz.) tomatoes, chopped
1/4 c. lemon juice
1 ham bone or ham hock

Soup mix - 8 different kinds of beans, split peas and lentils; about 3 cups total (makes 2 crock pots full - divide recipe in half to fill only 1 crock pot).

Soak beans overnight. Simmer 1 hour with ham hock. Add remaining ingredients. Simmer several hours more, until beans are very tender.
